美奶滋炸鸡

材料:
2只鸡腿, 斩块
5杯炸油
腌料 (拌匀):
1粒蛋, 1/2小匙盐
1大匙粟粉, 1大匙面粉
酱料:
4大匙美奶滋
1大匙番茄酱
2大匙辣椒酱
1小匙糖
1小匙酸柑汁
做法:
1. 鸡腿加入腌料拌匀, 腌30分钟, 然后放进油锅里, 大火炸至金黄色及熟, 捞起沥干油份.
2. 烧热1大匙油, 倒入酱汁和鸡肉块快速拌匀即可上碟享用.
Fried Chicken With Spicy Mayonnaise
Ingredients:
2 chicken whole legs, cut into pieces
5 cups oil for deep-frying
Marinade:
1 egg, 1/2 tsp salt
1 tbsp corn flour, 1 tbsp plain flour
Sauce (mixed):
4 tbsp mayonnaise
1 tbsp tomato sauce
2 tbsp chilli sauce
1 tsp sugar, 1 tsp lime juice
Method:
1. Combine chicken with marinade and marinate for 30 minutes. Deep-fry in hot oil until golden brown and cooked. Dish and drain.
2. Heat up 1 tbsp oil, put in sauce and chicken and stir-fry until well mixed. Dish up and serve. |

菜香豆腐

材料:
1块水豆腐, 1大匙油
1大匙葱头仔碎. 100g肉碎
3大匙菜脯碎, 浸淡
调味料:
1大匙蚝油, 1/2小匙糖
少许麻油和胡椒粉, 1大匙青葱粒
做法:
1. 烧热1大匙油, 爆香葱头仔,下菜脯炒香, 再加入肉碎和调味料炒匀, 铺在豆腐上.
2.煮滚蒸笼水, 放进豆腐大火蒸10分钟即可取出, 洒上青葱粒趁热享用.
Steamed Bean Curd With Minced Meat and Preserved Raddish
Ingredients:
1 block white bean curd, 1 tbsp oil
1 tbsp chopped shallot, 100g minced meat
3 tbsp chopped preserved raddish, soaked
Seasoning:
1 tbsp oyster sauce
1/2 tsp sugar
dash of sesame oil and pepper
1 tbsp chopped spring onion
Method:
1. Heat up 1 tbsp oil and saute chopped shallot until fragrant. Add in chopped preserved raddish and stir-fry until aromatic. Stir in minced meat, seasoning and mix well. Remove and place pver bean curd.
2. Steam bean curd at high heat for 10 minutes. Sprinkle chopped spring onion on top and serve hot. |

苦瓜煎蛋

材料A:
1大匙油, 1小匙蒜茸
250g苦瓜, 切薄片, 少许盐
材料B:
4粒蛋, 1小匙盐
1大匙生抽, 3大匙油, 煎蛋
少许胡椒粉和鸡晶粉
做法:
1. 热油爆香蒜茸, 下苦瓜炒匀, 下盐, 再炒至苦瓜稍软便可盛起.
2. 将炒过的苦瓜和材料B拌匀.
3. 烧热3大匙油, 倒入苦瓜混合料, 中小火煎至金黄, 再翻另一面继续煎至金黄便可.
Bittergourd Omelette
Ingredients A:
1 tbsp oil, 1 tsp chopped garlic
250g bittergourd, sliced thinly
salt to taste
Ingredients B:
4 eggs, 1 tsp salt
1 tbsp light soya sauce
Dash of pepper and chicken stock granules
3 tbsp oil, for frying omelette
Method:
1. Heat up oil and saute chopped garlic until fragrant. Add in bittergourd and mix well. Add salt and continue to stir-fry until bittergourd is soft. Dish up.
2. Combine bittergourd, ingredients B in a mixing bowl and mix well.
3. Heat up 3 tbsp oil, pour in mixture (2) and pan-fry at medium heat until set. Turn it over and continue to fry until golden brown. Dish up and serve. |

甘香乌冬面

材料:
2包乌冬面, 烫一烫
100g虾仁, 1 条苏冬, 切花
100g包菜, 切丝,
5大匙甘香酱 (请参考#275楼,第11页)
做法:
1. 烧热2大匙油, 爆香甘香酱, 加入包菜炒匀.
2. 将虾仁和苏冬加入, 最后加入乌冬面大火炒匀便可上碟享用.
Kam Heong Udon Noodle
Ingredients:
2 packets udon noodles , blanched
100g prawns meat
1 fresh squid, cut into pieces
100g cabbage, shredded
5 tbsp Kam Heong Sauce
Method:
1. Heat up 2 tbsp oil and saute Kam Heong Sauce until fragrant. Add in cabbage and stir-well.
2. Add in prawns, squid and stir-fry until well-mixed. Lastly add in udon noodles and stir-fry at high heat until well mixed. Dish up and serve. |

材料:
150g梅香咸鱼, 切碎
10粒葱头仔, 切碎
1大匙蒜茸, 1大匙糖
100ml水, 100ml油
做法:
烧热油, 爆香葱头仔碎和蒜茸碎, 加入咸鱼和糖炒香便可, 加入水小火煮3分钟即可.
Fragrant Salted Fish Paste
Ingredients:
150g mui-heong salted fish, chopped
10 shallots, chopped
1 tbsp chopped garlic
1 tbsp sugar, 100ml water, 100ml oil
Method:
Heat up oil, saute chopped shallot and garlic until fragrant. Add in chopped salted fish, sugar and stir well. Add in water and cook for 3 minutes. Remove from heat. |

咸鱼酱炒饭

材料:
3大匙油, 3碗白饭
2粒蛋, 打散, 100g虾仁
100g冷藏杂豆, 1大匙青葱粒
2大匙咸鱼酱, 少许胡椒粉
做法:
1. 烧热3大匙油, 下蛋液炒至熟, 加入虾仁炒香, 加入白饭和冷藏杂豆炒匀.
2. 加入咸鱼酱, 青葱粒和胡椒粉炒匀便可上桌享用.
Fried Rice With Salted Fish Paste
Ingredients:
3 tbsp oil, 3 bowls cooked rice
2 eggs, beaten, 100g prawn meat
100g frozen mixed vegetables
1 tbsp chopped spring onion
2 tbsp Fragrant Salted Fish Paste
dash of pepper
Method:
1. Heat up 3 tbsp oil, add in beaten egg and stir-fry until set. Add in prawn meat and stir-fry until fragrant. Add in rice, mixed vegetables and stir-fry until well-mixed.
2. Add in Salted Fish Paste, spring onion, pepper and stir-fry until well-mixed. Dish up and serve. |

材料:
300g肉碎, 2大匙姜丝
2大匙咸鱼酱, 1大匙青葱粒
调味料:
1小匙生抽, 少许麻油和胡椒粉
1小匙粟粉, 2大匙水
做法:
1. 肉碎加入调味料充分拌匀, 用碟盛起.
2. 将姜丝洒上, 再淋上咸鱼酱, 然后放进蒸笼里大火蒸15分钟至熟, 取出洒上青葱粒便可享用.
Steamed Minced Pork With Salted Fish Paste
Ingredients:
300g minced pork, 2 tbsp shredded ginger
2 tbsp Fragrant Salted Fish Paste
1 tbsp chopped spring onion
Seasoning:
1 tsp light soya sauce
dash of sesame oil and pepper
1 tsp corn flour, 2 tbsp water
Method:
1. Combine minced pork, seasoning and mix well. Arrange onto a steaming plate.
2. Sprinkle shredded ginger on top pf minced pork and spread over Salted Fish Paste. Steam at high heat for 15 minutes or until cooked. Dish up, sprinkle chopped spring onion on top and serve hot. |

金沙香酥肉

材料:
300g猪肉, 切条, 1 1/2杯炸油
腌料:
1/2 粒蛋, 1小匙盐
1/2小匙糖, 少许胡椒粉和麻油
1大匙粟粉, 1/2大匙面粉
材料A:
200ml油, 1粒蛋, 打散
3大匙蒜茸, 1大匙指天椒碎
3大匙麦片, 压碎
做法:
1. 肉条加入腌料拌匀, 腌30分钟, 然后放进热油中炸至金黄色, 捞起沥干油份.
2. 烧热200油, 加入蛋液炒匀, 再加入蒜茸和指天椒小火炸至金黄色, 捞起沥干油份.
3. 用干净的镬加入麦片小火炒香, 加入做法(1)和(2)炒匀即可上碟享用.
Golden Crispy Oat Pork
Ingredients:
300g pork, cut into strips
1 1/2 cups oil for deep-frying
Marinade:
1/2 egg, 1 tsp salt
1/2 tsp sugar, dash of pepper and sesame
1 tbsp corn flour, 1/2 tsp plain flour
Ingredients A:
200ml oil, 1 egg, beaten
3 tbsp chopped garlic
1 tbsp chopped chilli padi
3 tbsp Nestum, crushed
Method:
1. Combine pork strips with marinade and marinate for 30 minutes. Deep-fry
in hot oil until golden brown. Dish and drain.
2. Heat up 200ml oil, add in beaten egg and stir well. Add in chopped garlic,
chilli padi and stir-fry at low heat until golden brown and crispy. Dish
and drain.
3. Stir-fry Nestum oat in a clean wok until fragrant. Add in crispy pork
strips and (2) mixture, stir-fry until well mixed and dish up. |

材料:
1盒水豆腐, 蒸7分钟
3朵冬菇, 浸软, 切片
5粒蘑菇, 切半
1包鲜金针菇
1大匙油, 1小匙蒜茸
1/2小匙姜茸, 200ml水
调味料:
1大匙蚝油, 1/2小匙盐
1小匙生抽, 1/2小匙糖
少许麻油和胡椒粉
做法:
1. 烧热1大匙油, 爆香蒜茸和姜茸, 下冬菇,蘑菇和金针菇炒匀.
2. 将调味料和水加入, 煮滚2分钟, 淋上豆腐即可上碟享用.
Barised Assorted Mushrooms With Bean Curd
Ingredients:
1 box white bean curd, steamed for 7 minutes
3 black mushrooms, soaked and cut into half
5 button mushrooms, cut into half
1 packet fresh golden pin mushroom
1 tbso oil, 1 tsp chopped garlic
1/2 tsp chopped ginger, 200ml water
Seasoning:
1 tbsp oyster sauce, 1/2 tsp salt
1 tsp light soya sauce, 1/2 tsp sugar
dash of sesame oil and pepper
Method:
1. Heat up 1 tbsp oil, saute chopped garlic and ginger until fragrant. Add in black mushrooms, button mushrooms, golden pin mushrooms and stir well.
2. Add in seasoning, water and cook for 2 minutes. Pour over bean curd and serve. |

西洋菜蜜枣排骨汤

材料:
600g西洋菜, 3粒蜜枣
500g排骨, 斩块
1条鱿鱼干, 1500ml水
适量盐调味
做法:
1.排骨放进滚水中烫去血水, 洗净沥干水分.
2. 准备一炖盅, 将全部材料放入, 然后放进蒸笼里大火蒸4小时, 加入适量盐调味即可享用.
Watercress And Honey Dates Soup
Ingredients:
600g watercress
3 honey dates
500g spare ribs, cut into pieces
1 dried cuttlefish
1500ml water
salt to taste
Method:
1. Blanch spare ribs in boiling water for a short while. Remove and wash. Drain well.
2. Put all ingredients into a double-boiler and double-boil at high heat for 4 hours. Add salt to taste. Serve hot. |

香槟排骨

材料:
600g排骨, 斩块
腌料:
1大匙面粉, 1大匙粟粉
1小匙蛋黄粉, 1粒蛋
1小匙苏打粉, 1小匙松肉粉
1小匙盐, 3大匙水
汁料:
150ml香槟酒, 50ml七喜
1小匙西芹碎, 3片柠檬肉
1小匙柠檬汁, 1大匙糖
1小匙蛋黄粉
做法:
1. 将排骨加入腌料拌匀腌约3小时.
2. 放入热油中炸约7分钟至金黄色, 捞起沥干油份.
3. 将汁料倒入镬中煮滚, 加入排骨炒匀便可上碟.
Champagne Ribs
Ingredients:
600g spare ribs, cut into pieces
Marinade:
1 tbsp plain flour, 1 tbsp corn flour
1 tsp custard powder, 1 egg
1 tsp bicarbonate of soda
1/2 tsp meat tenderizer
1 tsp salt, 3 tbsp water
Sauce:
150ml babycham, 50ml 7-up
1 tsp chopped celery
3 pieces lemon flesh
1 tsp lemon juice
1 tbsp sugar
1 tsp custard powder
Method:
1. Combine spare ribs with marinade and mix well. Marinate for 3 hours.
2. Deep-fry in hot oil for about 7 minutes or until golden brown. Dish and drain.
3. Pour sauce into a clean wok and bring to boil. Add in spare ribs, mix well and dish up. |

2. 将调味料加入拌匀, 再加入红辣椒粒,青葱粒和水,小火煮3分钟便可.
Black Bean Sauce
Ingredients:
5 shallots, peeled and chopped
2 tbsp chopped garlic
1 tbsp chopped ginger
100g fermented black beans, soaked and chopped
2 red chillies, chopped
1 stalk spring onion, chopped
100ml oil, 100ml water
Seasoning:
2 tbsp light soya sauce
2 tbsp oyster sauce
1 tbsp sugar
dash of sesame oil and pepper
Method:
1. Heat up oil, saute chopped shallots, garlic and ginger until fragrant. Add in fermented black beans and stir-fry until aromatic.
2. Add in seasoning, red chilli, spring onion and water. Mix well and cook at low heat for 3 minutes. Remove from heat. |

1. 将全部材料用大腕盛起, 拌匀腌2小时.
2. 放进蒸笼里大火蒸45分钟至熟便可, 洒上青葱粒即可上桌.

1 red chilli, diced
3 tbsp Fermentedd Black Bean Sauce
2 tbsp water, 1 tbsp chopped spring onion
Method:
1. Mix all ingredients and marinate for 2 hours.
2. Steam at high heat for 45 minutes. Sprinkle chopped spring onion on top and serve hot. |

1粒洋葱, 切角
2条红辣椒, 切角
5大匙豉汁酱
100ml水, 少许粟粉水打芡用
做法:
1. 肉蟹沾上干粟粉, 然后放进热油中炸熟, 捞起沥干油份.
2. 烧热2大匙油, 爆香灯笼椒,洋葱和红辣椒, 加入豉汁酱,肉蟹和水大火炒匀, 下粟粉水打芡便可上碟享用.
Stir-Fried Crabs In Black Bean Sauce
Ingredients:
1kg crab, cleaned and cut into pieces
1 capsicum, sliced
1 onion, sliced
2 red chillies, sliced
5 tbsp Fermented Black Bean Sauce
100ml water
a little corn flour water for thickening
Method:
1. Coat crabs with a little corn flour, deep-fry in hot oil until cooked. Dish and drain.
2. Heat up 2 tbsp oil, saute capsicum, onion and red chillies until fragrant. Add in Fermented Black Bean Sauce, crabs, water and stir-fry at high heat until well-mixed. Thicken with corn flour water, stir well and dish up. |

还有我想知道那些酱料,如果煮不完放在冰箱,大概可以放几久,谢谢先! |
