冬菇酱

材料:
100g冬菇蒂, 浸软, 切碎, 打烂成泥
10粒葱头仔, 剁碎
1大匙蒜茸
100ml水, 100ml油
调味料:
3大匙蚝油, 1大匙生抽
1小匙盐, 1小匙糖
少许胡椒粉
做法:
1. 烧热油爆香葱头仔和蒜茸, 加入冬菇蒂炒香.
2. 将调味料和水加入煮滚便可.
Black Mushroom Sauce
Ingredients:
100g black mushroom stems, soaked, chopped and blended
10 shallots, peeled and chopped
1 tbsp chopped garlic
100ml water, 100ml oil
Seasoning:
3 tbsp oyster sauce
1 tbsp light soya sauce
1 tsp salt, 1 tsp sugar
dash of pepper
Method:
1. Heat up oil, saute chopped shallots and garlic until fragrant. Add in
blended black mushroom stems and stir-fry until aromatic.
2. Add in seasoning, water and bring to boil. Remove from heat. |

红烧冬菇冬粉煲

材料:
200g冬粉, 浸软
100g鸡胸肉, 切丝
50g红萝卜丝
20g金针, 浸软
2棵青葱, 切段
400ml水, 5大匙冬菇酱
做法:
1. 烧热2大匙油爆香冬菇酱, 加入鸡胸肉炒匀.
2. 将冬粉和水加入煮滚, 然后加入其它的材料焖熟便可上碟享用.
Braised Tunghoon In Mushroom Sauce
Ingredients:
200g tunghoon, soaked
100g chicken breast, shredded
50g shredded carrot
20g dried lily bulbs, soaked
2 stalks spring onion
400ml water
5 tbsp Black Mushroom Sauce
Method:
1. Heat up 2 tbsp oil and saute Black Mushroom Sauce until fragrant. Add
in shredded chicken and stir well.
2. Add in tunghoon, water and bring to boil. Add in the remaining ingredients and simmer until cooked. Dish up and serve. |

冬菇酱烧鱼

材料:
1条鱼, 约800g
4大匙冬菇酱
2大匙滚水
1张锡箔纸
做法:
1. 鱼洗净, 涂上少许的盐和胡椒粉, 然后放在锡箔纸上.
2. 冬菇酱加入滚水拌匀, 淋在鱼身上, 并将锡箔纸包好.
3. 预热烤箱, 以220。C烤20-25分钟便可取出享用.
Baked Fish In Mushroom Sauce
Ingredients:
1 fish, about 800g
4 tbsp Black Mushroom Sauce
2 tbsp boiling water
1 pieces aluminium foil
Method:
1. Clean the fish and rub with little salt and pepper. Place onto aluminium foil.
2. Mix Black Mushroom Sauce with boiling water and spread over the fish.
Wrap well.
3. Bake the fish in a preheated oven at 220。C for 20-25 minutes or until
cooked. Remove and serve hot. |

椰香排骨

材料:
600g排骨, 斩块
200ml浓椰浆
1000ml水
2大匙油
香料(打烂):
3支香茅
5粒葱头仔
6条红辣椒
2cm嫩姜
调味料:
3大匙番茄酱
1小匙盐
1/2大匙糖
1大匙咖哩粉
做法:
1. 烧热2大匙油, 爆香香料, 加入排骨炒匀.
2. 加入水分和调味料煮滚, 转小火继续焖至排骨软.
3. 将浓椰浆加入煮2分钟即可上碟享用.
Spare Ribs In Coconut Milk
Ingredients:
600g spare ribs, cut into pieces
200ml thick coconut milk
1000ml water
2 tbsp oil
Spices (grounded):
3 stalks lemongrass
5 shallots, 6 red chillies
2cm fresh ginger
Seasoning:
3 tbsp tomato sauce
1 tsp salt, 1/2 tbsp sugar
1 tbsp curry powder
Method:
1. Heat up 2 tbsp oil and saute grounded spices until gragrant. Add in spare ribs and stir well.
2. Add in water, seasoning and bring to boil. Lower the heat and continue to cook until the spare ribs are tender.
3. Pour in coconut milk and cook for another 2 minutes. Dish up and serve hot. |

辣椒鸡

材料:
2只全鸡腿, 斩块
3杯炸油
1粒洋葱, 切粒
腌料:
1小匙盐
少许麻油和胡椒粉
1小匙粟粉
汁料:
3大匙辣椒酱
1大匙番茄酱
1小匙糖, 2大匙水
做法:
1. 鸡腿加入腌料拌匀, 腌30分钟, 然后放进热油中炸至金黄色, 捞起沥干油份.
2. 烧热1大匙油, 爆香洋葱, 加入汁料煮至浓, 最后加入炸好的鸡块拌匀即可上桌享用.
Fried Chicken In Chilli Sauce
Ingredients:
2 chicken whole legs, cut into pieces
3 cups oil for deep-frying
1 onion, diced
Marinade:
1 tsp salt
dash of sesame oil and pepper
1 tsp corn flour
Sauce:
3 tbsp chilli sauce
1 tbsp tomato sauce
1 tsp sugar, 2 tbsp water
Method:
1. Mix chicken with marinade and marinate for 30 minutes. Deep-fry in hot oil until golden brown. Dish and drain.
2. Heat up 1 tbsp oil and saute onion until fragrant. Add in sauce and bring to boil until thick. Add in fried chicken and mix well. Dish up and serve. |

蜜豆珍珠贝

材料:
珍珠贝一罐
姜3片
大蒜3粒
甜豆50g
调味料:
盐1茶匙
米酒1茶匙
做法:
1. 珍珠贝放入滚水中川烫, 捞起. 姜,大蒜去皮, 切末, 甜豆洗净.
2. 锅中倒入2大匙油烧热, 爆香大蒜, 放入珍珠贝和甜豆拌炒, 加入姜,调味料及1茶
匙水拌炒至入味, 即可盛出. |

南瓜杏仁汤

材料:
南瓜600g
杏仁75g
调味料:
盐1茶匙
做法:
1. 南瓜洗净, 稍微削去外皮, 切块; 杏仁洗净备用.
2. 所有材料放入锅里, 加水至淹过材料, 以大火煮开后, 改用小火焖煮至南瓜熟烂
, 再加盐调味即可. |

甜酸骨

材料:
肉排 半斤
青椒、紅椒、黃椒 各半隻
菠蘿 80克
洋蔥 半個
醃料:
鹽 半茶匙
糖 1/4茶匙
蠔油 1茶匙
生粉 1 1/2湯匙
燒酒 1/4茶匙
麻油 半茶匙
雞粉 半茶匙
蛋黃 1個
調味料:
生抽 3湯匙
糖膠 1茶匙
茄汁 3湯匙
糖 2 1/2湯匙
鎮江醋 1 1/2湯匙
製作過程:
1.醃肉排20分鐘,青椒、紅椒、黃椒、洋蔥及菠蘿切細粒。
2.肉排上粉炸熟至金黃,盛起待用。
3.炒青椒、紅椒及黃椒,加入調味料兜勻,再加入肉排兜勻即成。 |

600ml黄酒 / 上等白米酒
100ml水
调味料:
1小匙盐
1/2大匙糖
做法:
烧热1大匙麻油, 爆香姜丝, 加入全部材料A炒香, 倒入黄酒,水和调味料煮至鸡肉熟
. 趁热享用.
Chicken In Glutinous Rice Wine
Ingredients:
1 tbsp sesame oil
100g shredded ginger
2 chicken whole legs, cut into serving pieces
2 tbsp shredded black fungus
600ml glutinous rice wine
100ml water
Seasoning:
1 tsp salt
1/2 tbsp sugar
Method:
Heat up 1 tbsp sesame oil, saute shredded ginger until fragrant. Add in
the remaining ingredients and stir-fry until fragrant. Pour in wine, water,
seasoning and bring to boil until chicken is cooked. Serve hot. |

1小匙糖, 100ml油
做法:
烧热油爆香豆酱, 加入蒜泥和其它的材料煮滚, 转小火续煮5分钟便可.
Garlic And Fermented Soya Sauce
Ingredients:
2 whole garlic, peeled, mixed with 100ml water and blended finely
3 tbsp fermented soya bean paste
3 tbsp light soya sauce
1 tsp sugar, 100ml oil
Method:
Heat up oil and saute fermented soya bean paste until fragrant. Add in garlic puree and the remaining ingredients and bring to boil. Lower the heat and cook for 5 minutes. |
