Ingredients:
500g grouper fillet < I used Patin Fish Fillet, but I think any Fish Fillet will do > 50g dried shrimps (soaked & chopped) 3 shallots (finely chopped) 2 cloves garlic (finely chopped) 1 stalk Lemongrass (finely chopped) < if you like the fragrance of the lemongrass, should add extra> 3 bird’s eye chillies (finely chopped) <for those who can’t eat spicy, can reduce the amount of chilli> 8-10 pcs young mulberry leaves (shredded) <can add more leaves, acts as vegetables lor> ½ tsp salt ½ tsp chicken stock granules 2 tbsp cooking oil
Method:
1. Heat up 2 tbsp of oil, sauté chopped shallots, garlic, lemongrass, and bird’s eyechillies till fragrant. 2. Add in chopped shrimps, stir fry till fragrant. 3. Place in fish fillets, stir fry for a couple of minutes till the fish fillet is cooked. 4. Lastly add in shredded young mulberry leaves, slat and chicken stock granules, stir well. 5. Pour onto plate and SERVE.
Note: <you can add some mulberry fruits as topping. The mulberry fruit gives a fresh taste when you eat it with the fish fillets.>
