家常便饭之 - 黄酒鸡 + 可乐鸡 (附加照片)(15/05/08)

妈蜜鸡

材料:
250ml 炸油
2只鸡腿, 约500g, 斩小块
腌料:
1小匙生抽,1/2小匙盐
1/2小匙胡椒粉, 1大匙粟粉
汁料:
2大匙妈蜜酵母精华
1大匙麦芽糖, 1大匙蜜糖
1大匙生抽
少许胡椒粉和鸡晶粉
100ml水
做法:
1. 将鸡加入腌料拌匀腌1小时,然后放进烧热的油中炸2分钟或至熟,捞起沥干油份.
2. 留1大匙油,倒入汁料中火煮至浓,倒入鸡肉块烧匀便可以上碟享用.
贴士:
可以用同样的汁料抄成"妈蜜排骨"或"妈蜜虾",抄虾的话就不需要腌.
Marmite Chicken
Ingredients:
250ml oil for deep-frying
2 chicken thighs, about 500g cut into pieces
Marinade:
1 tsp light soya sauce, 1/2 tsp salt
1/2 tsp pepper, 1 tbsp corn flour
Sauce:
2 tbsp Marmite yeast extract
1 tbsp maltose, 1 tbsp honey
1 tbsp light soya sauce
dash of pepper and chicken stock granules
100ml water
Method:
1. Mix chicken with marinade and marinate for 1 hour. Deep-fry in hot oil for 2 minutes or until cooked. Dish and drain.
2. Leave 1 tbsp oil in work, pour in sauce and cook at medium heat untilthick. Put in fried chicken and mix well. Dish up and serve.
Tips:
Can use the same method to prepare "Marmite Spare Rips" or "Marmite Prawns". Do not marinate prawns before frying.

海鲜卷
材料:
(A) 虾 (去壳,预先穿烫,待冷备用)
(B)少许蜜瓜(切丝),少许 一碗马蹄(切丝), 少许1碗红萝卜(切丝)
(C) Mayonis 7汤匙, 幼糖 1 1/2 汤匙, 柠檬汁 1/2茶匙, 炼奶 1/2茶匙
春卷皮(中) 约10片, 蛋白少许
做法:
1. 把(C)搅拌均匀,加入(A)和(B)搅拌=(D).
2. 把1汤匙(D)放在春卷皮上包里,再搽少许蛋白于接口处使之黏稳=(E).
3. 把(E)放入热油中炸至金黄色即可. |

咖啡排骨

材料:
1kg 排骨, 斩块
腌料:
1大匙蚝油, 1小匙糖
1小匙盐, 1小匙麻油
1粒蛋, 2大匙蛋黄粉
1小匙苏打粉
200ml水
200g粟粉, 后下
汁料:
2大匙麦芽糖, 2大匙糖
1大匙急汁
1小匙即溶咖啡粉
100ml水
做法:
1. 排骨加入腌料充分拌匀,腌约3小时,然后放进热油中炸至金黄,捞起沥干油份.
2. 汁料倒入镬煮2分钟至浓.
3. 将排骨倒入快速拌匀便可上碟.
Coffee Spare Ribs
Ingredient:
1kg spare rib, cut into pieces
Marinade:
1 tbsp oyster sauce, 1tbsp sugar
1 tsp salt, 1 tsp sesame oil
1 egg, 2tbsp plaint flour
1 tbsp custard powder
1 tsp bicarbonate of soda
200ml water
200g corn flour, ass in last
Sauce:
2 tbsp maltose
2 tbsp sugar
1 tbsp worcestershire sauce
1 tsp instant coffee powder
100ml water
Method:
1. Combine spare ribs with marinade and mix well. Marinate for 3 hours.
Deep fry in hot oil until golden brown. Dish and drain.
2. Pour sauce into a clean wok and cook for 2 minutes until thick.
3. Put in fried spare ribs, mix well and dish up. Serve.

金银菜烧猪手汤

材料:
1只烧猪手 (500g), 斩块
300g猪展肉, 切块
1条鱿鱼干, 洗净
200g白菜, 洗净
50g 菜干,浸软, 洗净
1500ml 滚水
适量盐调味
做法:
1. 烧猪手和猪展肉放进滚水中烫一烫, 捞起洗净.
2. 将所有材料放进炖盅内,大火隔水炖约3小时,加入盐调味,趁热饮用. (4人份)
Roasted Pig's Trotter and Dried Bai Cai Soup
Ingredients:
1 roasted pig's trotter (500g), cut into pieces
300g pork, cut into pieces
1 dried cuttlefish, cleaned
200g bai cai, cleaned
50g dried bai cai,soaked and cleaned
1500ml water
salt to taste
Method:
1. Blanch roasted pig's trotter and pork in boiling water for a short while.
Dish up and cleaned.
2. Place all ingredients into a double-boiler. Double-boil at high heat
for 3 hours. Add salt and taste. Serve hot. (Serves 4)

豆乳泥酱

材料:
3 大匙蒜茸
3 大匙葱头仔碎
1 大匙姜茸
20 块腐乳, 压烂
1 大匙糖
100ml 水
100ml 油
做法:
烧热油爆香蒜茸, 葱头仔碎和姜茸, 然后加入腐乳抄匀, 最后加入其余的材料煮滚
便可
Fermented Bean Curd Sauce
Ingredients:3 tbsp chopped garlic
3 tbsp chopped shallot
1 tbsp chopped ginger
20 pieces fermented bean curd, mashed
1 tbsp sugar
100ml water
100ml oil
Method:
Heat up oil, saute chopped garlic, shallots, ginger until fragrant, add
in fermented bean curd and stir-well. Add in the remaining ingredients and
bring to boil. Remove from heat.

桂皮乳香羊腩煲

材料A:
1kg 羊腩,切块
5大匙豆乳泥酱
2支腐竹支, 浸软切块
2000ml 水
材料B:
1粒八角
5cm 桂皮
5条辣椒干
做法:
1. 将半锅水煮滚下羊腩煮约15分钟去血水捞清洁干净。
2. 烧热的大匙油爆香材料B,加入羊腩和豆乳泥酱抄香
3. 加入水煮滚转小火焖1小时半加入腐竹支继续焖20分钟便可取出享用. (5-6人份
)
酱料食谱变化:
1. 腐乳抄油麦菜:先烧热油爆香豆乳泥酱和指天椒,加入油麦大火抄匀即可.
2. 豆乳炸鸡或排骨: 将鸡块或排骨加入豆乳泥酱和以粒蛋拌匀腌约3小时,沾上粟粉
放入热油中炸至金黄及熟便可.
存放时间: 1个月 (冰箱)
Savoury Lamb Tripes Stew
Ingredients A:
1kg lamb tripes, cut into pieces
5 tbsp Fermented Bean Curd Sauce
2 dried soya bean sticks,
soaked and cut into pieces
2000ml water
Ingredients B:
1 star anise
5cm cinnamon stick
5 dried chillies
Method:
1. Bring half pot of water to boil. Put in lamb tripes and cook for 15 minutes
until grayish foam forms on surface. Remove and clean.
2. Heat up 1 tbsp oil, saute ingredients B until fragrant. Add in lamb tripes,
Fermented Bean Curd Sauce and stir-fry until aromatic.
3. Add in water and bring to boil. Lower the heat and simmer for another
1 1/2 hours. Add in dried soya bean stick and continue to simmer for 20
minutes. Serve hot. (Serves:5-6)
Variations:
1. Vegetables: Heat up oil, saute Fermented Bean Curd Sauce and chilli padi
until fragrant. Add in vegetables and stir-fry until cooked. Dish up and
serve hot.
2. Chicken or spare ribs: Combine chicken or spare ribs with Fermented Bean
Curd Sauce, egg and marinate for 3 hours. Coat with corn flour and deep-fly
in hot oil until cooked. Dish and drain. Storage Time: 1 month (in the fridge)
