香蕉核桃杯子蛋糕 Banana Walnut Cup Cake 100g butter, soften at room temperature 160g caster sugar (I reduced to 100g) 3 eggs, lightly beaten, room temperature 1 teaspoon pure vanilla extract 2 large ripe bananas, mashed 210g plain flour 1 teaspoon baking powder 50g walnuts, chopped 50g chocolate chips With an electric mixer or a manual whisk, cream butter andsugar till light and fluffy. Dribble in the eggs gradually and beat till incorporated inthe batter. (The mixture may appear slightly curdled.) Add vanilla extract and mashed bananas. Mix till smooth. Sieve over flour and baking powder and mix till smooth. Add chopped walnuts (reserve some for sprinkling the top,optional) and chocolate chips. Mix with a spatula. Pour batter into paper cup. Sprinkle the top with theremaining walnuts on top. Bake in pre-heat oven at 180'C for 30-40 minute.
